Layered Apricot Yogurt Parfaits
INGREDIENTS

825g can apricot halves in natural juice, drained
1 tablespoon orange juice, (no added sugar)
2 cups low fat or 'diet' vanilla, passionfruit or apricot yogurt
4 passionfruit
1 tablespoon chopped macadamias
METHOD

Place ½ cup apricot halves and orange juice in a blender and puree until smooth.

Layer the apricot halves, yogurt, puree and passionfruit into four tall glasses. Repeat layers until all ingredients are used.

Top with chopped macadamias. Serve immediately.
