Cosmopolitan granita and coconut cream pannacotta

Cosmopolitan granita and coconut cream pannacotta
INGREDIENTS

2/3 cup (160ml) water
2/3 cup (150g) sugar
2½ cups (625ml) cranberry juice
¼ cup (60ml) vodka
1 tablespoon cointreau
1 tablespoon lime juice

METHOD

Combine the water and sugar in a small saucepan, stir over a low heat, without boiling, until sugar dissolves. Remove from heat; cool to room temperature.

Combine the syrup with the remaining ingredients in a deep, 23cm-square cake pan. Freeze the mixture until just firm. Break up the mixture with a fork until flaky. Refreeze.

Just before serving, break up the mixture with a fork. Scoop into chilled glasses.

Suitable to microwave.

I give up! Where's the yummie looking recipe!!!!!
So, Womens Weekly, make up for it next time, ok?
Made the PC from the recipe search, mid-morning. Dissolved sugar in milk & cream over low heat, just warm. Also added pieces of orange jest. Dissolved geletine in water over a pot of simmering water, but had to add an exta Tabelspoon of water as one was not enough. Once gelatine dissolved, removed zest, stirred in gelatine. Stired in vanilla essence. Poured into moulds. When I unmoulded that evening, there was about 1.5 cm of paler mixture on top - which then became the bottom - of the cotta. Can you tell me why this separation occured? Delicious, by the way and loved the orange flavour. Thanks for your help in anticipation. Desiree

I agree....where is the recipe for the Coconut pannacotta...Looks too yummy to miss out on...
