Christmas and picnics

Burnt brown sugar ice-cream with pistachio praline, photographed by Dean Wilmot.

To me, Christmas day means a late breakfast after the excitement of the present-opening, followed by a long lingering lunch with my family. The age range of the family covers nine decades, so there are many tastes and traditions to consider when it comes to planning the menu for the big day.

I've decided to do the complete menu using recipes from our latest Women's Weekly cookbook called Christmas, which is available from supermarkets and newsagents for $12.95.

Although spoilt for choice, the decisions ended up being quite easy. I've gone for a bit of modern, with some traditional standbys for good measure, so I'm sure everyone will be happy.

My son and I do the planning and the cooking and make sure we thoroughly enjoy the whole day. Here's what we're having for lunch at our place; we believe in having choices:

To drink
Sparkling burgundy and cranberry punch

Starters
Prawns with basil remoulade
Marinated duck with peppered strawberries
Smoked trout and avocado salad

Mains
Glazed ham with asparagus salad
Barbecued butterflied turkey with vegetable salad
Seared tuna with verjuice dressing

Desserts
Burnt brown-sugar ice-cream with pistachio praline
Boiled Christmas pudding with brandy custard

Oh, and of course there will be Christmas cake — the boiled one this year — and mince pies just in case anyone is starving to death.

During the holiday period we're bound to do at least one picnic. Once again it will be for the family. We don't normally fuss too much with picnic food as these get-togethers are usually impromptu but, if you're organising a picnic, have a look at our new cookbook for some cracking ideas. The book is called Picnics, and it's available at newsagents and supermarkets for $12.95.
