Honey and ginger baked chicken with kumara
INGREDIENTS
2 tablespoons finely grated fresh ginger
¼ cup (90g) honey
2 tablespoons brown sugar
2 cloves garlic, crushed
8 chicken thigh fillets
2 small (440g) kumara, peeled, halved
or quartered lengthways
1 lemon, sliced thinly
1 large green chilli, sliced, optional
METHOD
Combine ginger, honey, sugar and garlic in a large bowl; toss chicken in ginger mixture.
Roll chicken thigh fillets loosely and place on a large baking paper-lined shallow oven tray with kumara and lemon slices. Drizzle with any remaining ginger mixture; sprinkle with salt and pepper.
Preheat the oven to 180°C (160°C fan-forced). Bake, uncovered, for about 30 minutes or until chicken and kumara are cooked through and browned. Add the chilli 10 minutes before end of cooking time, if using. Serve chicken and kumara with steamed green vegetables, if desired.
Not suitable to freeze or microwave.

i came across this recipe looking for something to do with chicken - and its great! the only thing that needs to be refined is... the side dish... what do you serve with this dish????? when i made it I just served it on a big lovely dish and we all went in with forks (with a couple of coronas on the side!!)

Hey guys tried this last night and its not too bad and I'm not a fan of ginger. If I make it again I would probably use far less ginger but that is just personal preference.
So is the recipe actually any good other than everyone aguing what one of the ingredients is called?
RUDE, RUDE, RUDE - there's no reason to be at all. If you look at the recipe, the authors are the ones using the gold version and calling it kumara - it's not my recipe. No need for insults peoples.

Use unsalted cashews in the roasted curry mixture or the taste of the finished butter chicken may not be as mellow as it could be.
