Rich chocolate almond slice
INGREDIENTS

150g dark eating chocolate, melted
3 egg whites
¾ cup (165g) caster sugar
1 cup (110g) packaged ground almonds
2 tablespoons plain flour

topping
125g butter, chopped
1/3 cup (75g) caster sugar
3 egg yolks
1 tablespoon brandy, optional
200g dark eating chocolate, melted
METHOD

Grease and line base and two long sides of a 20cm x 30cm lamington pan with baking paper.

Spread base of pan with melted chocolate. Refrigerate for 10 minutes or until set.

Beat egg whites in a clean small bowl with an electric mixer until soft peaks form; gradually add sugar, beating until dissolved between additions. Fold in nuts and flour; spread over chocolate base. Bake in a moderate oven for about 20 minutes or until firm; cool for 20 minutes.

Topping
Beat butter, sugar, egg yolks and brandy in a small bowl with an electric mixer until sugar is dissolved; stir in chocolate.

Spread slice with Topping, bake for further 15 minutes or until set; cool. Refrigerate until firm before cutting into squares.
