Serve ribs with steamed rice and stir-fried asian greens. Ask the butcher to cut the rib racks into pieces that will fit your slow cooker.
INGREDIENTS
2.5kg american-style pork spare ribs
2 tablespoons peanut oil
½ cup (125ml) char siu sauce
2 tablespoons light soy sauce
¼ cup (60ml) orange juice
5cm (2 inch) piece fresh ginger (25g), grated
2 cloves garlic, crushed
1 fresh long red chilli, chopped finely
2 teaspoons sesame oil
METHOD
Cut rib racks into pieces to fit 4.5-litre (18-cup) slow cooker. Heat peanut oil in large frying pan; cook ribs, in batches, until browned all over.
Meanwhile, combine sauces, juice, ginger, garlic, chilli and sesame oil in jug; brush all over ribs. Place ribs in cooker; pour over remaining sauce. Cook, covered, on low, 7 hours.
Remove ribs from sauce; cover to keep warm. Place sauce in medium saucepan; bring to the boil. Boil, uncovered, about 5 minutes or until sauce is thickened slightly.
Serve ribs drizzled with sauce.
