Pork with sweet and sour peaches

Pork with sweet and sour peaches
INGREDIENTS

2 tablespoons cornflour
750g pork fillet, sliced thinly
2 tablespoons peanut oil
1 medium (200g) red onion, cut into wedges
1 medium (200g) red capsicum, sliced thinly
1 medium (200g) yellow capsicum,
sliced thinly
1/3 cup (80ml) water
2 cloves garlic, crushed
2 tablespoons sugar
2 tablespoons white wine vinegar
2 tablespoons purchased tomato sauce
2 tablespoons light soy sauce
2 large (440g) peaches, cut into wedges
1/3 cup fresh coriander leaves
METHOD

Rub the cornflour into the pork in a medium bowl.

Heat half the oil in a wok over high heat until very hot. Stir-fry the pork in batches until just browned, but not quite cooked.

Heat the remaining oil in the wok. Add the onion and capsicum, and stir-fry over high heat until just tender.

Return the pork to the wok with the water, garlic, sugar, vinegar and sauces; stir-fry until combined. Add peaches, toss gently and stir-fry until just warmed through. Top with coriander leaves and serve with steamed rice, if desired.
