Chicken sticks with harissa mayonnaise

Chicken sticks with harissa mayonnaise
INGREDIENTS

2 tablespoons pistachio dukkah
1½ teaspoons mild paprika
2 tablespoons olive oil
6 (600g) chicken thigh fillets, halved lengthways
lemon wedges, to serve

harissa mayonnaise
½ cup (150g) whole egg mayonnaise
2 teaspoons harissa
2 teaspoons lemon juice
METHOD

Combine the dukkah, paprika and olive oil in a medium bowl. Season with salt and freshly ground black pepper.

Add the chicken and toss well. Thread the chicken onto skewers. Cook the skewers on a heated oiled grill plate until browned all over and cooked through.

Harissa mayonnaise
Combine all the ingredients in a small bowl.

Serve chicken skewers with Harissa Mayonnaise and lemon wedges.
