Rhubarb, berry adnd muesli crumble

INGREDIENTS

3½ cups (380g) coarsely chopped rhubarb
300g frozen mixed berries
1/3 cup caster sugar
1 x 550g tub of Dairy Farmers Thick and Creamy Field Strawberries yogurt

Crumble
½cup (75g) self-raising flour
1/3 cup (75g) firmly packed brown sugar
75g cold butter, chopped
1 cup (110g) natural muesli

METHOD

Preheat oven to 180°C/160°C fan-forced. Grease a deep 1.5 litre (6-cup) baking dish.

Combine the rhubarb, berries and caster sugar in a medium saucepan; cook, covered, over low heat for about 8 minutes, or until rhubarb is tender.

Meanwhile, to make crumble, combine flour and brown sugar in a medium bowl; rub in butter using fingertips until the mixture resembles coarse breadcrumbs. Stir in muesli.

Place rhubarb mixture in dish; sprinkle with crumble. Bake for about 20 minutes, or until browned lightly. Serve crumble hot, topped with yogurt.
