Greek-style chicken salad
Greek-style chicken salad recipe.
INGREDIENTS
1 large (750g) cos lettuce, shredded finely
3 cups (480g) cooked chicken,
shredded finely
6 green onions (green shallots),
sliced thinly
¼ cup (30g) seeded green olives,
sliced thinly
2 tablespoons fresh dill, chopped
1/3 cup (80ml) olive oil
¼ cup (60ml) lemon juice
salt and freshly ground black pepper
METHOD
Combine the lettuce, chicken, onions, olives and dill in a large serving bowl.
Combine oil, juice and salt and pepper to taste in a screw-top jar; shake well.
Just before serving, add the dressing to the salad and toss gently to combine. Serve with grilled or fresh bread,
if desired.
Not suitable to freeze or microwave.
