Delicious Italian brown rice salad recipe.
INGREDIENTS
1 cup (200g) medium-grain brown rice, rinsed
1 cup (160g) chopped cooked chicken
2 green onions (green shallots), sliced thinly
¼ cup (50g) drained sun-dried tomatoes, chopped coarsely
¼ cup (40g) small black olives
2 tablespoons slivered almonds, toasted
2 tablespoons fresh parsley or basil, chopped
Lemon mustard dressing
2 tablespoons lemon juice
1 tablespoon Dijon mustard
½ clove garlic, crushed
2 tablespoons extra virgin olive oil
salt and freshly ground pepper
METHOD
Cook the rice following the packet directions.
To make the lemon mustard dressing, combine all ingredients in a screw-top jar; shake well.
Add remaining ingredients to warm rice. Stir through lemon
mustard dressing.
Serve warm or chilled.
Suitable to freeze. Rice suitable to microwave.
