Grilled vegetable and haloumi wraps
INGREDIENTS
3 baby (180g) eggplant, sliced thinly
2 medium (240g) zucchini, sliced thinly
1 small (250g) kumara, sliced thinly
1 medium (200g) red capsicum,
sliced thickly
1 medium (200g) yellow capsicum,
sliced thickly
2 tablespoons olive oil
1 teaspoon dried oregano leaves
salt and freshly ground black pepper
1/3 cup (80ml) lemon juice
3 cloves garlic, crushed
4 large pitta breads
¾ cup (200g) plain yogurt
1 teaspoon sweet paprika
250g haloumi cheese, sliced
75g baby spinach leaves
METHOD
Heat a barbecue (or grill pan or non-stick frying pan).
Combine eggplant, zucchini, kumara, capsicums, oil, oregano, salt, pepper, half the juice and half the garlic in a large bowl.
Cook vegetables on a heated barbecue (or grill pan or frying pan), in batches, until tender. Transfer to a serving platter; cover to keep warm. Add pitta bread to barbecue, cook until browned lightly on both sides and just heated through.
Combine remaining juice and garlic with yogurt and paprika in a small bowl.
Barbecue haloumi until browned on both sides and heated through.
Divide vegetables and haloumi among warm pitta breads; top with baby spinach. Drizzle with yogurt mixture and wrap tightly to enclose filling.
