Chorizo and chickpeas in white wine
INGREDIENTS

1 tablespoon olive oil
1 small brown onion (80g), sliced finely
2 cloves garlic, crushed
2 chorizo (340g), chopped coarsely
1 medium red capsicum (200g), sliced finely
400g can chickpeas, rinsed, drained
½ teaspoon smoked paprika
¼ cup (60ml) dry white wine
1/3 cup (80ml) chicken stock
METHOD

Heat oil in large frying pan; cook onion, garlic and chorizo, stirring, until chorizo is browned lightly.

Add capsicum, chickpeas and paprika; cook, stirring, until capsicum softens. Add wine and stock; cook, stirring, until liquid is reduced by half.
