Bacon and vegetable slice

Talk about cheap and easy! My boys love this slice as an alternative to sandwiches in the lunchbox. It takes minutes to prepare and is full of flavour and stacks of vegetables, too.
INGREDIENTS

1 small (100g) red onion, chopped coarsely
1 medium (120g) carrot, chopped coarsely
1 small (150g) capsicum, chopped coarsely
6 eggs
1 cup (150g) self-raising flour
50g baby spinach leaves, shredded finely
200g short cut rindless bacon, chopped finely
1 1/2 cups (180g) grated cheddar cheese
1/4 cup (60ml) vegetable oil
METHOD

1. Preheat the oven to 180°C (160°C fan-forced). Grease a 20cm x 30cm slice pan, line base with baking paper.
2. Place onion, carrot and capsicum into the bowl of a food processor and process until vegetables are of a grated consistency (alternatively, if you don’t have a food processor, you can grate it with a cheese grater, but that is more time consuming).
3. Whisk the eggs and flour in a large bowl until combined. Season with salt and freshly ground pepper. Add all the vegetables, bacon, cheese and oil; stir until combined.
4. Pour into the prepared pan and bake for 25 minutes or until set.
5. Cool in the dish and cut into 12 pieces with a sharp knife.

Suitable to freeze. Not suitable to microwave.
