Watermelon and fetta salad

Watermelon and fetta salad

Not only do the red, green and white of this salad look beautifully Christmassy, but the flavours are so fresh and it's outrageously healthy.
INGREDIENTS

1/4 (1kg) seedless watermelon, cut into 3cm cubes
2 (260g) Lebanese cucumbers, seeded, sliced thinly
6 green onions (green shallots), sliced thinly
1/4 cup chopped fresh mint
125g fetta cheese
2 tablespoons lemon juice
fresh mint sprigs, for serving
METHOD

1. Combine the watermelon, cucumber, onion and chopped mint in a large bowl; toss gently.
2. Arrange watermelon mixture on a large platter. Sprinkle with crumbled fetta.
3. Drizzle lemon juice over the salad; sprinkle with extra mint sprigs.

Not suitable to freeze.
