Pork meatball curry
INGREDIENTS

600g minced pork
2 tablespoons mild curry paste
6 medium (900g) tomatoes,
chopped coarsely
150g green beans, trimmed, halved
METHOD

1. Season pork well with plenty of salt and freshly ground black pepper. Roll level tablespoons of pork into 24 balls. Heat oiled large saucepan over medium heat. Cook meatballs about 5 minutes or until browned all over. Remove from pan. Add curry paste; cook, stirring, until fragrant.
2. Add tomato and 1/3 cup (80ml) cold water; bring to the boil. Simmer, uncovered, stirring occasionally, about 5 minutes or until sauce is thickened slightly.
3. Return meatballs to pan with beans. Simmer, covered, about 10 minutes or until beans are tender. Season to taste.

Suitable to freeze. Not suitable to microwave.
