Salade compose
INGREDIENTS

1 small french bread stick (150g)
2 cloves garlic, crushed
¼ cup (60ml) olive oil
6 rindless bacon rashers (390g), sliced thickly
150g mesclun
6 medium egg tomatoes (450g), sliced thinly
4 hard-boiled eggs, halved lengthways
red wine vinaigrette
¼ cup (60ml) red wine vinegar
3 teaspoons dijon mustard
1/3 cup (80ml) extra virgin olive oil
METHOD

Preheat grill.

Cut bread into 1cm slices. Brush both sides with combined garlic and oil; toast under preheated grill.

Cook bacon in large frying pan until crisp; drain on absorbent paper.

Meanwhile, place ingredients for red wine vinaigrette in screw-top jar; shake well.

Layer bread and bacon in large bowl with mesclun and tomato, top with egg; drizzle with vinaigrette.
