Oysters with lime dressing
INGREDIENTS

36 oysters, on the half shell
1/3 cup (80ml) lime juice
3 teaspoons white sugar
1 kaffir lime leaf, shredded finely
1 fresh long red Thai chilli, deseeded,
cut into small fine strips, optional
2½ tablespoons peanut oil
METHOD

Carefully remove oysters from their shells; wash and dry the shells if necessary. Return the oysters to the shells; place in a single layer on a serving platter or individual serving plates.

Place remaining ingredients in a screw-top jar; shake well. Season with salt. Drizzle dressing over oysters; serve immediately.
