Winter salad
INGREDIENTS

150g wild rocket
150g baby spinach leaves
3 cups loosely packed fresh
flat-leaf parsley leaves
¼ medium (375g) red cabbage,
shredded finely
½ medium (85g) red onion, sliced thinly
dressing
½ cup (125ml) extra virgin olive oil
1/3 cup (80ml) red wine vinegar
1 clove garlic, crushed
½ teaspoon caster sugar
METHOD

DRESSING:
Combine all ingredients in a screw-top jar; shake well. Season to taste with salt and pepper.

Combine salad ingredients in a large bowl.

Just before serving, add Dressing; toss well.
