Crunchy honey muesli

Serving size: Serves 6
Cooking time: Less than 60 minutes
Course: Breakfast

INGREDIENTS

3 cups (270g) rolled oats
1 cup (50g) flaked coconut
1 cup (140g) slivered almonds
½ cup (125ml) honey
½ cup (80g) sultanas
½ cup (75g) dried apricots, sliced
1 green apple, chopped finely
400g yogurt
1 tablespoon honey, extra
milk or fruit juice, to serve

Note: the muesli can be made two weeks ahead and stored in an airtight container. Add the apples and yogurt mixture just before serving.
METHOD

Preheat the oven to moderate (180°C). Combine oats, coconut, almonds and honey in a bowl and mix well. Spread the muesli evenly in two greased baking dishes. Bake in a moderate oven for about 10 minutes or until golden brown, stirring often. Stir in the sultanas and apricots, then cool mixture in dishes.

Just before serving, add the apple and top with the combined yogurt and extra honey. Serve with milk or fruit juice, if desired.

Not suitable to freeze. Not suitable to microwave.
