Black forest parfait

INGREDIENTS

350g prepared chocolate cake, chopped
425g can stoneless black cherries
2 tablespoons kirsch
¾ cup (180ml) thickened cream
1 tablespoon icing sugar mixture
50g dark chocolate, optional

NOTE: This recipe can be prepared several hours ahead.

METHOD

Divide the chopped cake among four serving glasses (one-cup capacity). Drain the cherries over a jug and reserve two-thirds of a cup (160ml) of the juice. Stir half the kirsch into the reserved juice and drizzle over the cake in the glasses. Place the drained cherries over the cake.

Beat the cream with the remaining kirsch and icing sugar in a small bowl with an electric mixer until soft peaks form.

Spoon the cream mixture over the cherries.

Using a vegetable peeler, shave the chocolate over the cream, if desired.

Not suitable to freeze.
