Croque monsieur

Croque monsieur
INGREDIENTS

2 teaspoons butter
2 teaspoons plain flour
½ cup (125ml) milk
1 teaspoon Dijon mustard
salt and pepper
8 slices thick Italian bread
8 slices Swiss or gruyere cheese
250g sliced ham
50g butter, extra

NOTE: The white sauce can be made a day ahead and the sandwiches can be prepared several hours ahead. Cook the sandwiches just before serving.
METHOD

Melt the butter in a small saucepan; stir in the flour. Cook, stirring, until bubbling. Remove from the heat, gradually stir in the milk. Stir over the heat until the mixture boils and thickens. Stir in the mustard and season to taste with salt and pepper. Cool.

Spread four slices of the bread with the white sauce. Top with half of the cheese, all of the ham, then the remaining cheese and remaining bread.

Heat the extra butter in a large frying pan; add the sandwiches and cook until they are browned on both sides and the cheese has melted.

Serve immediately.

Uncooked sandwiches suitable to freeze. White sauce suitable to microwave.

Cook's note
If using a sandwich press, use the extra butter to spread on the outside of the bread slices.
