Kofta with tunisian carrot salad

INGREDIENTS

500g beef or lamb mince
1 cup (70g) fresh breadcrumbs
¼ cup finely chopped fresh mint
1 teaspoon ground allspice
1 teaspoon ground coriander
1 teaspoon cracked black pepper
1 tablespoon lemon juice
salt
200g yogurt

Tunisian carrot salad
3 large (540g) carrots
¼ cup (60ml) lemon juice
1 tablespoon olive oil
½ teaspoon ground cinnamon
½ teaspoon ground coriander
¼ cup firmly packed fresh mint leaves
¼ cup (35g) roasted shelled pistachios
¼ cup (40g) sultanas
METHOD

Using hand, combine mince, breadcrumbs, mint, spices, juice and salt in a medium bowl. Roll mixture into 12 balls, roll balls into sausage-shaped kofta. Cook kofta on a heated oiled flat barbecue plate (or frying pan), uncovered, until cooked through.

Meanwhile, cut carrots into 5cm lengths; slice pieces thinly lengthways. Cook carrot on heated oiled grill plate, uncovered, until just tender. Place carrot in large bowl with remaining ingredients; toss gently to combine.

Serve kofta with Tunisian Carrot Salad and yogurt.

Kofta suitable to freeze. Not suitable to microwave.
