Pork and corn salsa tortilla wraps

INGREDIENTS

600g pork fillet, sliced thinly
2 tablespoons peanut oil
35g packet taco seasoning mix
16 soft corn tortillas
1 butter lettuce, torn
½ cup (120g) light sour cream

Corn salsa
310g can corn kernels, drained
3 medium (450g) tomatoes, chopped coarsely
1 small (100g) red onion, chopped finely
½ cup coarsely chopped fresh coriander
METHOD

Combine pork, oil and seasoning mix in a medium bowl; toss to coat pork.

Warm tortillas according to packet directions.

Corn Salsa
Combine corn, tomato, onion and coriander in a medium bowl.

Cook pork on heated oiled grill plate or large frying pan until pork is browned and tender.

Serve pork wrapped in tortillas with Corn Salsa, lettuce and sour cream.
Not suitable to freeze or microwave.
