Caramelised onion and balsamic relish

Caramelised onion and balsamic relish
INGREDIENTS

1/3 cup olive oil
4 large red onions, sliced thinly
2 cloves garlic, crushed
2 teaspoons yellow mustard seeds
2/3 cup firmly packed brown sugar
2/3 cup balsamic vinegar
½ teaspoon salt

METHOD

Heat oil in a large deep frying pan. Add onions and garlic; cook, covered, over low heat for about 30 minutes, stirring occasionally, until soft.

Stir in mustard seeds and cook a further 1 minute.

Add sugar, vinegar and salt. Bring to the boil, reduce heat; simmer, uncovered, stirring occasionally, for about 5 minutes, or until most of the liquid has evaporated and the onions are caramelised.

Spoon mixture into hot sterilised jars; seal while hot. Keep refrigerated.

Just made a double batch.It is delicious....Really easy to make,but a bit tricky to put in the jars.I got 5 mixed size jars.From double the amount as above, so it is worth while making double.Also,I didn't have mustard seeds so just used colmans english regular yellow mustard.....perfect. Can't wait to eat it now.
Just about to make Caramalised Onion Relish....I"ll let you know how it goes...They are for my FAMILY HAMPERS for CHRISTMAS....Fingers crossed.x
