Shepherd's pie
INGREDIENTS

30g butter
1 medium brown onion (150g), chopped finely
1 medium carrot (120g), chopped finely
½ teaspoon dried mixed herbs
4 cups (750g) finely chopped cooked lamb
¼ cup (70g) tomato paste
¼ cup (60ml) tomato sauce
2 tablespoons worcestershire sauce
2 cups (500ml) beef stock
2 tablespoons plain flour
1/3 cup (80ml) water
potato topping
5 medium potatoes (1kg), cut in chunks
60g butter
¼ cup (60ml) milk

METHOD

Preheat oven to 200°C/180°C fan-forced. Oil shallow 2.5-litre (10 cup) ovenproof dish.

Make potato topping.

Meanwhile, heat butter in large saucepan; cook onion and carrot, stirring, until tender. Add mixed herbs and lamb; cook, stirring, 2 minutes. Stir in paste, sauces and stock, then blended flour and water; stir over heat until mixture boils and thickens. Pour mixture into dish.

Drop heaped tablespoons of potato topping onto lamb mixture. Bake in oven about 20 minutes or until browned and heated through.

Potato topping
Boil, steam or microwave potato until tender; drain. Mash with butter and milk until smooth.

My family really enjoyed this, I cooked boned lamb in an oven bag and let it cool in the bag with the juices and drained and exchanged half of the juices with the stock, will be a family favourite, already requested twice this week

At least someone knows a shepherds pie is made with lamb!!
Substitute the lamb with 1 kg of mince. Works just as well.
wen i saw the link for this i feared the worst. just about everyone i know who has ever made a shepherds pie (except my family) didnt even make one. I would get all excited being told we are going to have shepherds pie for dinner only to be extreemly dissapointed wen i have my 1st bite. Beef meat used to make a so called shepherds pie, that would be a stockmans or cottage pie. I would tell whoever cooked it that its not shepherds pie cos they used beef not lamb. They would try to argue the point but in the end id just say shepherds dont look after cows. Anyway back to the point. im glad i wasnt dissapointed and that it is a genuine shepherds pie. However something that i would like to suggest wen it comes to cooked lamb. Dont use lamb mince, roast a leg of lamb and if u have a bench-top mincer run the roasted lamb through it insted of diceing. The extra effort doing this this will reward u with a much tastier pie.
Add a teaspoon of mild curry to the beef mixture once cooked. This will add a little heat to the dish which is great in winter.
