Crepes with banana and passionfruit syrup
INGREDIENTS
1/4cup (35g) plain (all-purpose) flour
1 tablespoon skim milk
1/3 cup (80ml) water
2 teaspoons honey
2 tablespoons passionfruit pulp
1 small banana (130g), sliced thickly
note you need about two passionfruit
METHOD
1 Sift flour into small bowl; gradually whisk in combined milk and the water until batter is smooth. Heat medium non-stick frying pan over medium heat; pour in half the batter, tilt pan to cover base with batter. Cook crepe until browned lightly, loosening edge with spatula. Turn crepe; brown
the other side. Remove crepe from pan; cover to keep warm. Repeat with remaining batter.
2 Meanwhile, combine honey and pulp in a small microwave-safe jug; microwave on MEDIUM (50%) about 30 seconds or until hot.
3 Serve crepes with banana and hot passionfruit syrup.
