Chilli salt prawns
INGREDIENTS
1kg uncooked medium king prawns
1 tablespoon olive oil
2 teaspoons sea salt flakes
½ teaspoon dried chilli flakes
1 teaspoon finely chopped fresh flat-leaf parsley
yogurt dipping sauce
1 cup (280g) yogurt
2 tablespoons mayonnaise
1 tablespoon finely grated lemon rind
1 tablespoon lemon juice
METHOD
Preheat oven to 220°C/200°C fan-forced. Oil oven tray; line with baking paper.
Make yogurt dipping sauce.
Shell and devein prawns, leaving tails intact.
Combine prawns, oil, salt and chilli on tray; spread prawns into single layer. Cook prawns about 10 minutes.
Sprinkle parsley over sauce; serve with prawns.

Use unsalted cashews in the roasted curry mixture or the taste of the finished butter chicken may not be as mellow as it could be.
