Spicy beef stroganoff

This recipe is an old time favourite.
INGREDIENTS
1kg beef rump steak
2 tablespoons olive oil
1 medium (150g) onion, chopped
2 cloves garlic, crushed
2 teaspoons ground hot paprika
1 teaspoon cayenne pepper
1 teaspoon sambal oelek
250g button mushrooms, sliced
1 tablespoon lemon juice
2 tablespoons dry red wine
1/4 cup (60ml) tomato paste
300ml sour cream
METHOD
Wrap beef in plastic, freeze until firm. Slice beef thinly. Heat oil in pan, add beef in batches, cook until browned, remove. Add onion and garlic to pan, cook, stirring, until onion is soft. Add paprika, pepper, sambal oelek and mushrooms, cook, stirring, 2 minutes. Add juice, wine, paste and cream, simmer, stirring, until thickened. Add beef, stir until hot.
Serves 4 to 6.
Best made just before serving.
