Roast chicken with spicy rice seasoning

INGREDIENTS

1.6kg chicken 40g butter, melted
1 tablespoon lemon juice
1/4 teaspoon ground hot paprika
Spicy rice seasoning
1 tablespoon oliveoil
1 small (80g) onion, finely chopped
2 cloves garlic, crushed
1 small (130g) apple, chopped
1/4 cup (35g) dried apricots, thinly sliced
1/4 cup (40g) sultanas, chopped
2 tablespoons chopped fresh parsley
1 teaspoon ground cumin
1 & 1/2 teaspoons ground turmeric
1 teaspoon ground hot paprika
1/2 teaspoon cayenne pepper
1 bay leaf
1 cup cooked white long-grain rice
METHOD

Fill chicken with seasoning, secure openings with toothpicks, tie legs together, tuck wings under. Brush chicken with butter. Place chicken, breast side up, on wire rack in baking dish. Bake, uncovered, at 180°C for 1 hour and 10 minutes. Brush chicken with juice; sprinkle with paprika. Bake at 180°C for about 30 minutes or until chicken is tender.

Spicy rice seasoning: Heat oil in pan, add onion and garlic, cook, stirring, until onion is soft. Add remaining ingredients, cook, stirring, 2 minutes; cool.

Serves 4 to 6.
Seasoning can be made a day ahead.
Storage: Covered, in refrigerator.
Freeze: Seasoning suitable.
Microwave: Not suitable.
