Lemon Jelly Slice

Course: Dessert

INGREDIENTS

BASE:

1/4 cup sugar
1 1/2 cups self-raising flour
1/2 cup melted reduced fat margarine
1 egg white

Preheat oven 200 degrees C. Place dry ingredients into a medium sized mixing bowl, stir in egg white. Melt margarine, pour onto ingredients, and mix well. Lightly press into a slab tin that has been coated with cooking spray. Bake 15-20 minutes or until golden brown.

TOPPING:

1/2 cup sugar
2 Tbs custard powder
1/2 cup lemon juice
3/4 cup water
METHOD

Place sugar, custard powder and water into a medium sized saucepan, whisk till blended. Add in lemon juice, stirring constantly until mixture has boiled and is thick. Pour topping over base while both hot. Once cooled, cut into 15 pieces.
