Zucchini Slice

Serving size: Serves 6

INGREDIENTS

2 packed cups (350g) grated zucchini
3/4 cup self raising flour
2 cups (250g) mixed vegetables: grated carrot, diced capsicum and celery
1 1/2 cups (110g) grated 25% reduced fat cheddar cheese
1/2 cup frozen peas
1/2 cup frozen corn nibblets
2 whole eggs
3 egg whites
1 diced onion
1 cup (120g) diced lean ham
Salt and pepper to taste
METHOD

Preheat oven to 180 degrees C.
In a large bowl add all ingredients except the cheese. Add 2/3 of cheese to mixture. Mix well. Coat quiche or lasagne dish with cooking spray. Spoon mixture into dish, then sprinkle remaining cheese on top. Bake 35-40 minutes or until golden brown.
