Beef Stroganoff


Serving size: Serves 4
Cuisine type: Russian

INGREDIENTS

800g top round, cut into chunks
2 Tbs butter
1 chopped onion
300g Swiss brown mushrooms, halved
2 Tbs paprika
3 Tbs dry mustard
2 tsp salt
1/2 Tbs coarse black pepper
flour and water to thicken
300ml sour cream

METHOD

Heat a little oil in a pan and seal the meat in batches until well browned. Set aside.
Return pan to the heat, add butter and onions and cook for 1-2 minutes or until onions have turned translucent.
Add mustard, paprika, salt, pepper, flour and water paste to thicken. Add mushrooms and sour cream. Return the beef and juices and heat through.
Serve with a crisp green salad.
