Chocolate chip muffins

INGREDIENTS

2 cups self raising flour
2 egg whites
½ cup sugar
½ cup chocolate chips
½ cup apple sauce
½ cup skim milk
1 teaspoon vanilla essence
¾ teaspoon bicarb soda
METHOD

Preheat oven 200°C.

Coat 12 cup muffin tray with cooking spray. Beat egg whites, sugar and essence for 1 minute in a medium size mixing bowl. Stir bi-carb soda

into apple sauce (it will froth), then add to bowl. Stir in milk and chocolate chips. Gently fold flour into mixing bowl in one go, DO NOT BEAT as this will make the muffins tough (mixture can look a little lumpy).
Spoon mixture into prepared muffin tin, dividing equally into 10 cups. Bake 15-20 minutes or until firm to touch in centre. Allow muffins to sit in tin for 5 minutes before turning out onto a wire rack to cool.
