Strawberries Romannette & Light Crepes- ANNETTE SYM


Serving size: Serves 4
Cooking time: Less than 30 minutes

INGREDIENTS

Filling:
1 x 200g tub vanilla diet yoghurt
2 x 130g tub vanilla light Fruche
1 tablespoon orange juice
250g chopped fresh strawberries
2 tablespoons (30ml) cointreau liqueur

Crepes: (Serves 8)
1 ¼ cups plain flour
2 egg whites
1 3/4 cups skim milk
METHOD

Filling:
Mix yoghurt and Fruche together in a medium mixing bowl. Fold in juice, cointreau and strawberries. Refrigerate until required.

Crepes:
Beat egg whites and milk together with a whisk, gradually add in flour, mix to a smooth batter.

Coat a non stick frypan with cooking spray. Pour 1/8 mixture into pan, spreading thinly, cook until lightly browned, turn, cook other side. Repeat till mixture has been used.
