Manti - SIBERIAN COSSACKS

INGREDIENTS

1kg of flour
2 teaspoons salt
1 egg
½ cup water, or more if necessary
500g of beef, or minced meat(half-frozen)
300g of pork with a little bit of fat (half-frozen)
3 onions
300g piece of pumpkin
1 clove of garlic
1 tablespoon chopped dill, or to taste
2 tablespoons chopped parsley, optional
black pepper
salt
1 tablespoon sunflower seed oil, or olive oil
50g butter, melted
bay leaf
METHOD

Dough:
Place flour in a large bowl. Stir through salt. Make a well in the centre and add the beaten egg and water. Mix together until the dough comes together. Knead until smooth.

Meat:
The meat should be half-frozen, so it can be cut. The meat is cut by a knife in tiny squares.
Mix meat with the onion, chopped pumpkin, garlic, dill, parsley and pepper. Then add some salt, some water and sunflower-seed oil (or olive oil).

Cut the dough into small pieces and roll into circles, and place some meat into the middle, lift the edges of the pastry over the meat, and squeeze together at the top. Then the 'manti' are dipped into butter.

Place bay leaf in a pot of water over which a steamer is placed.

Steam for 30-40 minutes.
