Swiss Mushroom Steak

INGREDIENTS
10g Australian butter
2 eye-fillet or scotch fillet steaks
4 field mushrooms
1 clove garlic, crushed
1 tablespoon chopped parsley
2 slices Australian Swiss-style cheese
freshly ground black pepper, to taste
steamed asparagus, to serve
METHOD
Melt butter in a large frypan and pan-fry steak on both sides over medium heat until cooked or until done to your liking.
Add mushrooms, garlic and parsley to the pan and cook until mushrooms are soft. Spoon the mixture over steak and top with slices of Australian Swiss-style cheese. Cook covered over low heat until the cheese has melted.
Season with pepper and serve with steamed asparagus.
Cook's Note:
Steak can be substitued with chicken, veal or lamb.
The Australian Swiss-style cheese can be used grated, however slices work best.
If Australian Swiss-style cheese is unavailable substitute with Australian mozzarella or tasty cheese.
