Cheat's Sauerkraut

INGREDIENTS
1 tablespoon olive oil
150g speck, cut into lardons
2 onions, chopped
½ large cabbage, sliced thinly
500mls white wine
1 tablespoon sugar
2 teaspoons salt
½ teaspoon caraway seeds, toasted
1 bay leaf
2 tablespoons prepared sauerkraut
METHOD
Heat oil in a large heavy based saucepan with a lid. Add speck and onions. Cook until speck is crisp. Add cabbage and cook, covered, on low heat until cabbage has wilted. Approximately 10 minutes. Add sugar, salt, caraway seeds and bay leaf and cook a further hour or until wine has been absorbed.
Stir through prepared sauerkraut and serve warm.
Serve with lyonnaise sausage and boiled potatoes.
