German potato salad

INGREDIENTS
1kg nicola potatoes
1 tablespoon oil
6 rashers bacon
1 large onion, thinly sliced
2 celery stalks, chopped
1 tablespoon plain flour
½ cup water
¼ cup cider vinegar
1 tablespoon sugar
salt and pepper
1 teaspoon celery seeds
2 tablespoons parsley, chopped
METHOD
Cook potatoes in boiling water until tender. Drain, cool, peel, and slice into rounds.
In a large frying pan heat oil and cook bacon until crisp. Remove, crumble and set aside.
In same frying pan with bacon fat, fry onions and celery until soft. Add flour, stirring until smooth. Gradually add water, cook over medium heat, stirring until thickened. Add vinegar, sugar, salt and pepper to taste and celery seeds. Mix well.
In a large bowl toss potatoes with bacon, parsley and dressing. Season more if desired.
