Herring salad

INGREDIENTS
2 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon sugar
1 teaspoon seeded mustard
½ red onion, thinly sliced
1 pink lady, cored and cut into small dice
1 cup parsley, picked
250g pickled herrings
freshly ground black pepper
rye bread, to serve
METHOD
In a medium bowl whisk olive oil, red wine vinegar, sugar and mustard. Set aside.
In a large bowl mix onion, apple, parsley and dressing.
Drain herrings, place on serving plate. Place salad on top, drizzle with dressing and cracked pepper. Serve with rye bread.
