Lemon chilli pork with Italian brown rice salad

INGREDIENTS
2 teaspoons finely grated lemon rind
2 tablespoons lemon juice
½ teaspoon dried chilli flakes
1 tablespoon olive oil
4 pork cutlets
Italian brown rice salad
1 cup brown long-grain rice
1 red capsicum
½ cup seeded black olives, chopped
2 tablespoons capers, rinsed and drained
½ cup fresh basil, roughly chopped
1/3 cup flat-leaf parsley, roughly chopped
2 tablespoons lemon juice
1 tablespoon olive oil
salt and pepper, to season
METHOD
Combine rind, juice, chilli, oil and pork in medium bowl. Cover; refrigerate until required.
Combine Italian brown rice salad ingredients and season with salt and pepper.
Cook pork, uncovered, in large heated frying pan about 15 minutes, turning over half way or until cooked as desired. Serve with rice salad.
