Sushi of marinated mackerel
INGREDIENTS
50ml light soy sauce
pinch of white sugar
50ml mirin
15ml lemon juice
30ml grapeseed oil
8 x 20g pieces of mackerel fillet, skin off and bones removed
1 cup
sushi ricesea salt
METHOD
Heat the soy sauce, sugar, mirin, lemon juice and oil until the sugar dissolves.
Pour over the mackerel fillets and let marinate for 2 hours, then drain.
Form sushi rice into 8 uniform pieces of sushi (about 2 inches long and less than an inch high).
Place the marinated mackerel fillets onto the sushi rice and sprinkle with sea salt.
Soy sauce not necessary.
