Beef burger
From AWW cookbook, Food for Healthy Kids
INGREDIENTS
1 small red onion (100g), halved
500g beef mince
½ small zucchini, grated
½ small carrot, grated
½ cup (125ml) barbecue sauce
1 tablespoon tomato sauce
4 thin slices fresh pineapple (150g)
4 hamburger buns (360g)
1½ cups finely shredded iceberg lettuce
1 large tomato (220g), sliced thinly
225g can beetroot slices, drained
METHOD
Chop half of the onion finely; cut remaining half into four slices.
Combine mince, zucchini, carrot, 1 tablespoon of the barbecue sauce, tomato sauce and chopped onion in a medium bowl. Shape mixture into four patties.
Cook pineapple and onion slices on heated oiled grill plate until pineapple is browned. Cook patties. Split buns; toast, cut-sides up, under preheated grill.
Spread remaining barbecue sauce on bun bases; layer all ingredients between bun halves.
