Chinese wonton soup
INGREDIENTS
1.5 litres (6 cups) good quality chicken stock
2 tablespoons light soy sauce
2 tablespoons shaoxing rice wine
1cm piece ginger, cut into thin strips
600g packet pork or prawn wontons
120g baby spinach
1 teaspoon sesame oil
1 green onion, thinly sliced
chilli sauce and extra soy to serve
METHOD
Place the stock in a large saucepan with soy, rice wine and ginger. Bring to the boil and add wontons. Cook soup and wontons according to packet directions.
Stir spinach and sesame oil into soup and heat until the spinach just wilts. Ladle soup into bowls and garnish with green onion. Serve immediately with chilli sauce and extra soy as desired.
