INGREDIENTS
1 cup sweet chilli sauce
¼ cup barbecue sauce
½ cup tomato sauce
1 teaspoon tabasco
½ large onion, grated
1 teaspoon hot paprika
2 teaspoon cornflour
2 small red chillies, seeds in or out, roughly chopped
1 tablespoon grated ginger
zest and juice of one lemon
3 x 1kg American style pork spare ribs
METHOD
Combine all the marinade ingredients in a bowl and stir well.
Place ribs in a ceramic or glass dish and pour over the marinade. Make sure the marinade coats both sides of each rack of ribs thoroughly. Leave ribs to marinade for as long as you can, although they will still be tasty if you can only leave them for 30 minutes.
Preheat the oven to 200°C conventional (180°C fan-forced).
Remove ribs from marinade, reserving it for basting, and place them in a large baking tray so the ribs do not overlap. Cook for 1 hour, basting with marinade every 15 minutes until ribs are cooked through and tender.
If desired you can make extra marinade and bring it to a boil in a small saucepan and serve it with the ribs.
Serve with a green salad, finger bowls and plenty of napkins.
