Skirt steak fajitas with guacomole

INGREDIENTS

500 grams skirt steak cut into ½cm thick slices
½ teaspoon cayenne pepper
1 teaspoon ground oregano
½ teaspoon ground cumin
½ teaspoon ground allspice
½ teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic, crushed
1 tablespoon neutral oil

Guacomole
1 avocado, peeled, seed removed and flesh cut into 1cm dice
½ red onion, cut into ½cm dice
1 large ripe tomato, seeds removed and cut into ½cm dice
2 tablespoons chopped coriander leaves
½ medium red chilli, very finely chopped
1 tablespoon olive oil
1 tablespoon lime juice
sea salt and black pepper to taste
tortillas, to serve
METHOD

Marinate steak in other ingredients for 2-4 hours.
Make guacamole by simply combining all ingredients and reserve.
Heat flat plate on bbq to very hot. Pour on marinated steak and turn each piece as it browns, 30 secs to a minute. Remove to a clean bowl when just cooked.
Heat tortillas and place some of the fried steak and some guacamole in each.
