Green onion pancakes

INGREDIENTS

2 cups plain flour
½ cup boiling water
½ cup cold water
Cooking oil spray

Green onion filling
1 tablespoons sesame oil
1 teaspoon salt
4 green onions, finely chopped
2 teaspoons toasted sesame seeds

Dipping sauce
2 tablespoons black vinegar
1 tablespoon light soy sauce
1 small red chilli, finely chopped
METHOD

Place flour into a large mixing bowl. Using a wooden spoon gradually stir in boiling water and 1/3 cup of the cold water (add remaining water if dough is too dry)

Turn mixture out onto a lightly floured surface, knead until mixture comes together to form a sticky dough, continue kneading until dough is no longer sticky and looks slightly greyish. Cover the dough with cling film and rest for 15 minutes. (It may seem like there is too little water at first but be patient. The dough will feel hot when kneading).

To make green onion filling, combine sesame oil, salt and green onions, mix well. Set aside 1 teaspoon of green onion mixture for the dipping sauce, before adding sesame seeds.

Divide the dough into 8 even pieces. Roll out each piece to form a 15cm round. Spread about 1 teaspoon of green onion and sesame seed mixture over top of each round. Using hands roll dough up tightly to form a cylinder shape. Fold ends over slightly and press down to stop any of the filling falling out.

Using hands roll up dough again, starting from one end to form a snail shape. Press snail side down with hands to flatten slightly and roll out on a lightly floured surface to form a 12cm circle. Repeat with remaining dough.

Spray a frying pan with cooking oil and heat over a medium high heat. Cook pancakes on one side for 2 minutes, turn over and cook a further 1 minute.

Combine dipping sauce ingredients with reserved green onion mixture and serve with warm pancakes.

Makes 8 pancakes.
