Roasted olives
INGREDIENTS
1 kg mixed olives
300g semi-dried tomatoes
2 tablespoons olive oil
1 tablespoon cumin seeds
grated orange rind of 1 orange
juice of 1 orange
METHOD
Preheat oven at 200°C/180°C (fan forced)
Combine all ingredients in a large baking dish. Cook for 45 minutes, turning occasionally or until olives a roasted and shrivelled slightly.
