Mountain style brown trout

INGREDIENTS

4 tablespoon olive oil
4 brown trout – cleaned and gutted
plain flour, seasoned for dusting
4 tablespoon butter
5 cloves garlic
4 chat potatoes, parboiled
12 green olives
12 cherry tomatoes
METHOD

Heat the oil in a large frying pan. Dust the fish with seasoned flour and add to the hot oil.

Cook the trout until golden and crisp on one side, then turn over, add the butter and cook until it turns nut brown.

Add the garlic and cook for a minute, then add the potatoes, tomatoes and olives and cook for a further minute until the fish is cooked through.
