Best ever new york cheesecake, desert, cheese cake
INGREDIENTS

2 x 250g packet orange cream sandwich biscuits, chopped
50g unsalted butter, melted
1 tablespoon caster sugar
white chocolate curls to decorate

Filling
4 x 250g packets cream cheese, at room temperature
1 cup caster sugar
300ml thickened cream
4 eggs

METHOD

Preheat oven 160°C/140°C (fan forced). Grease a 22cm round spring form (cake pan base measures 22cm).

Line base and side of pan with baking paper, extending paper 4cm above edge of pan. Place onto an oven tray.

Process biscuits and butter in a food processor until mixture resembles fine breadcrumbs.

Press over base of prepared pan and chill for 15 minutes.

To make filling, process cream cheese, sugar and cream in a food processor until smooth.

Add eggs and process until combined; pour mixture over biscuit base.
Cook for 30 minutes, or until just set. Turn oven off and leave to cool in oven for 1½ hours. Refrigerate overnight.

To serve, decorate with white chocolate curls.

I am very partial to cheesecakes. Is it OK to use ricotta cheese and low fat cream in this recipe? I have high cholesterol and I am on tablets. Please advise. Thank you.

i made for last weekend, it was jsut perfect. it turned out just like yours did on the show. my hubby sugested to add some lemon zest to it next time to tie in with the orange base. i think the base isnt too thick it was jsut perfect as the height if the cheeescake itself would have been to heavy for a thinner base. the tim tams sounds like a yummy idea. i just hate messing with a really good recipe that works first time you try it. thanks to the fresh team. but in saying that if i were to add like a cup of grated milk choc on to the mix, would that work???
You could try the vanilla or plain cream biscuits - I don't like the idea of orange cream either, so I use that...
Hey, Just watched the video and he adds the sugar when he takes the lid off to mix the cream cheese a bit... He doesn't say much about it, so it would be easy to miss... Good luck!!
Made the base with double coat Tim Tams...OMG so good!
It is the best ever. My 22cm spring form tin broke and had to use a 20cm. I put the extra mix into soft muffin tin, they were firmer but that made them easer to handle.
This cheesecake was delicious and easy to make but the base was way too thick. Just one packet of orange creams would do.
In the ingredients it mentions 1 tablespoon of caster sugar but watching the video the sugar wasn't used. Do I omit the sugar or put it in. What did anyone else do as I want to make this.
